I didn't even mention the cockroaches (those were to be expected though). And, to clarify--by that I mean they were running around, not to eat! A friend of ours routinely thanks me for convincing her of all the places she no longer needs/wants to see after my reportage! Wait until next week's post---Nacpan Beach is one that we'll never be able to repeat. That remote stretch of unpopulated shoreline will never be found again, I'm certain.

They call them belle lotus tents (with AC even which is needed because the heat hits you like a punch in the face as soon as you wake up!). Keep Nacpan in your (ice) bucket list! It may have nudged Zanzibar (almost) from our favourite place position.
Thanks, Karla. Any culinary inspiration for you here? Have you played around with jackfruit much? I remember my first encounter with it in Uganda. It requires a PhD to cut into---and then it should be an oiled knife blade and what you can and can't eat inside was really specific and too daunting (and exhausting)! Much easier to order on a pre-made sandwich, tacos or as a pizza topping.
I don't understand jackfruit. I had some packaged stuff in BBQ sauce. The picture on the package looked good but it wasn't my taste.... the texture put me off. I'm not anxious to try again but who knows.
At the moment I'm totally consumed by easy spring desserts. The recipes are for a magazine article so, of course, I have to taste everything before I can make a decision on which recipes to use.
I just read your apple enchilada post---"too much nutmeg tastes like insecticide." Wow, nailed it! I think I want to add cheese though---a nice stretchy one (to properly singe the roof of my mouth). I've also made note of your Easter-inspired orange zest dressing for asparagus.
As per jackfruit, my mom is on your side. Life's too short to eat gross things. What magazine are you writing for? Keep calm and taste on!
